Low Carb Recipe: Meat Pancake

Ingredients:

  • 4 skinless chicken breasts
  • 2 tablespoons coconut oil
  • 1 chopped onion
  • 2 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1/2 tablespoon ground ginger
  • 1/2 tablespoon salt
  • 1/4 tablespoon black pepper
  • 2 cups broccoli
  • 2 cups cauliflower

Instructions:

  1. Preheat the oven to 180°C (350°F).
  2. Season the chicken with salt, pepper, and curry powder.
  3. In a skillet, cook the chicken in coconut oil until golden brown.
  4. Add the onion, garlic, broccoli, and cauliflower. Cook until the vegetables are tender.
  5. Place the chicken and vegetables in a baking dish and bake for 20 minutes.
